Grapes: 100% Chardonnay
Vinification: Soft pressing, refrigeration followed by settling and racking of the cleaned must, then fermentation at a controlled temperature (of about 22 °C) adding selected yeasts to enable greater control of fermentation. The chardonnay grape particularly lends itself to vinification on oak barrels, the wine became this typical smell of wood, vanilla, spices and coffee.
